Barbecue Chicken Pizza


Pizza is perfect for any occasion, especially if you make it yourself! This pizza had the perfect soft crunch to its crust and a warm hearty taste. It was so easy to prepare and was gone way too quickly! If you know me, you know that I like to make prep time as short as possible, which is why I bought my pizza dough from WinCo Food. I made a couple of these pizzas at once and then just froze them for later. Then when I was ready to eat them, i just popped them into a pre-heated oven. Here's what you'll need:









1 pound pizza dough
1 small red onion
1 1/2 cups cooked shredded chicken
1 cup shredded mozzarella cheese
chopped cilantro, for garnish
1/2 cup barbecue sauce, divided
about 1 tbsp cornmeal




1. Preheat your oven to 500ºF.
2. Chop your cilantro and your onion (you will need them for later).

3Roll out the pizza dough until it is roughly 1/4-inch thick and how ever wide as your baking sheet is. Then dust the bottom of your pizza dough with cornmeal and lightly press it into the dough. Place the dough cornmeal side down onto a baking sheet and fold over the edge of the dough one inch all around. Add half of the barbecue sauce onto the pizza dough.




4. Next, in a bowl, toss together the other half of the barbecue sauce and the shredded chicken until the chicken is well coated. Then evenly distribute the barbecue coated chicken onto the pizza dough.



5. Sprinkle the shredded mozzarella cheese onto the pizza and then do the same with the chopped onion. Bake for 10 to 12 minutes.




6. Once the pizza has baked, carefully take it out of the oven and sprinkle it with cilantro. Enjoy!
