
These scrumptious cupcakes were so good and got rave reviews from some of my co-workers. I loved everything about these little guys and if you know me, I'm not much of a sweets person. Probably not the healthiest cupcakes but they're definitely going on my list of "to make again".
Ingredients for White Chocolate Walnut Cupcakes:
1 3/4 cups flour
3/4 cup sugar
1/2 cup butter
1 tsp baking powder
1/2 tsp salt
2 eggs
1 tsp vanilla extract
1 cup milk
4oz white chocolate chips
1 cup walnuts (crushed)
1. Sift flour and preheat the oven to 325°F.
2. Combine softened butter and sugar in a stand mixer using a whisk attachment for about 5 minutes or until fluffy. Using a rubber spatula make sure you're scrubbing down the batter on the edges of the mixer (I scrubbed the sides down once in the middle of mixing).
3. While the butter and sugar is mixing, pour the walnuts into a blender and pulse them until they become the consistency of flour with small chunks. Yes that's the best way I know to describe it ;) This is also a good time to melt the chocolate. I placed my white chocolate in the microwave for 15 second intervals and then stirred it until the chocolate was fully melted. Be careful when microwaving the chocolate because it can easily burn.
4. When the 5 minutes are up, add eggs on at a
time until just combined.
6. Add half of the flour, half of the milk, the salt and baking powder and stir until just combined, then add the rest of the flour and milk and mix well.
8. Line cupcake sheet with cupcake liners and fill each liner about 3/4 full of batter and bake for about 20 min or until toothpick comes out clean. I used a batter dispenser from Pampered Chef just because its not messy and I can really tell how much batter I'm putting into each cupcake but using a big spoon works just as well.

Ingredients for whipped white chocolate ganache:
6oz white chocolate chips
250ml heavy whipping cream
I used this video to make my frosting because it just turns out so smooth and perfect every time and the girl explains every step really well! Just click on the link and make sure you disable any pop-up blockers otherwise the video will not show. I also used pink food coloring in the frosting but you can leave it white or use any color you prefer!
