Stuffed Bell Peppers

These bad boys are so easy to make and are healthy too! I used ground turkey instead of ground beef or ground pork because it has less fat in it but you could substitute any meat of your liking. You could also make it vegetarian by adding a little more rice and veggies into the bell pepper and using black beans as a meat substitute! One of the things I love about this dish is that it's fuss free but tastes like there were hours of preparation put into it! These stuffed bell peppers taste amazing on their own, or if you want to experiment, add a dollop of sour cream or hot sauce onto them (it's like eating a whole new dish!).


Ingredients for Stuffed Bell Peppers:
1 pound ground turkey
1 cup brown rice (cook with 1 1/2 cups water)
8-10 bell peppers
1 (11.5 oz) can V8
1 (12 oz) can tomato sauce
1 medium sweet onion
2 medium carrots
1 tbsp sunflower oil
4 cups water (or chicken broth)
salt (to taste)
ground black pepper (to taste)
paprika (to taste)
dried crushed chili peppers (to taste)

1. Wash out all the starch from your rice and start cooking it. I used 1 cup of rice and 1 1/2 cups of water. Bring the rice to a boil in an uncovered pot, then turn off the stove and let the rice sit in the hot water for about 3 minutes then drain the water (the rice should be a little more than half way cooked).
2. Wash and mince the onion. In a pan, warm the sunflower oil and caramelize the onion.

3. Next, add the washed and grated carrots into the pan and soften the carrots stirring often.

4. Once the carrots have softened, add in the can of tomato sauce and stir until well incorporated. Let it cook for about 2 minutes then season to taste.


5. Combine your uncooked ground turkey, the mixture in the pan, and the rice into a deep bowl and stir well. Add seasoning to the mixture and stir again.


6. Cut off the tops of the bell peppers off and clean the insides (I cut the stems off the cut tops and minced the rest into the meat mixture).

7. Stuff your bell peppers making sure you're not pressing the meat mixture down, otherwise it'll be too much stuffing when you eat it and the bell might rip while cooking. Arrange your bell peppers in a pot so that they're facing up and that they're snug.

8. Add the V8 to your 4 cups of water (or 4 cups of chicken broth) then season the mixture to taste. 


9. Pour the V8 mixture into the pot with the stuffed bell peppers so that they are covered.


10. Place the pot onto the stove and bring to a boil. Once the water boils, lower the heat to medium and let the bell peppers simmer for 40-45 minutes. 

11. Serve your hot stuffed bell peppers as is or with sour cream or hot sauce! Enjoy!
