For this quick (but delicious) recipe you will only need five ingredients! The chicken came out beautiful and even though the only seasonings are salt and pepper, sometimes that all you need! I used chicken breasts, but this recipe works great for chicken thighs and legs as well. So go ahead and try it out! I'll bet you're going to love it!
Ingredients for Seared chicken breasts:
1 pound chicken breasts (I used 5 thick slices)
3 tbsp sunflower oil (divided)
1 medium sweet onion
salt (to taste)
pepper (to taste)
1. Preheat your oven to 400° F. Then, wash your chicken with cold water to remove any excess gunk then lay flat on a cutting board and salt and pepper it on both sides.
2. Pour 1 tbsp sunflower oil in skillet and let it heat up. Then, gently place chicken breasts in hot skillet for about 2 minutes, then flip them to the other side so both sides get a nice sear to them. Continue with all your chicken. Make sure to be adding in the other 2 tbsp of oil when the oil on the skillet is running low.
3. Cut your onion into circles. Place the seared chicken into an oven safe deep dish and place the onion circles onto the chicken (the onion gives off a really nice aroma and makes the chicken much tastier!) Bake for about 20-25 min (it took my chicken about 25-30 min to fully cook). Make sure you cut into the thickest part of your chicken and see if the meat has gone white. If not, let your chicken bake for a little longer until all the meat has turned white and juices run clear.
4. Once your chicken is ready, take it out of the oven and enjoy! Serve with a side of brown rice, potatoes, or a tossed garden salad!
