Skillet Chicken Fajitas

  • These chicken fajitas were so good and were gone before we knew it! This is definitely a recipe I will be making again! The bell peppers stay a little crunchy which balances really well with the warm chicken and rice. I loved the spices in this dish (maybe because I love spicy food) but you can make it less or more spicy just depending on your personal preference!  These super easy fajitas are best served rolled in a warm tortilla with some sour cream or salsa, or you know, eat them right out of the skillet! Your choice ;)



  • Ingredients:
  • 1 pound rice
  • 1 pound chicken breasts
  • 2-3 colorful bell peppers
  • 1 medium sweet onion
  • 3-4 cloves of garlic
  • 1 (10oz-can) Ro-Tel diced tomatoes and chilies
  • 1 bag of tortillas
Spices (to taste):
ground cumin
  • kosher salt
  • garlic salt
  • ground black pepper
  • smoked paprika

1. Wash your chicken (if raw) and cube into small pieces then spice to taste. Then, warm your skillet with one tbsp sunflower oil and cook your chicken until fully cooked (I had some prepared and frozen chicken in the freezer that I defrosted, spiced, and then just warmed in the skillet for a couple minutes). Once the chicken is ready, remove from skillet and set aside.


2. Wash and mince your sweet onion, then caramelize it until golden brown.



3. Add the washed and sliced bell peppers into the skillet and let them warm for about 2 minutes. Then add the can of diced tomatoes and chilies and stir until well incorporated. Let this cook for about 3 minutes.

4. Add the chicken back into the skillet and stir. 


5. Now all that's left, is to spoon some rice onto a soft tortilla, roll it all up with sour cream and/or salsa (sour cream and salsa are optional. Its delicious on it's own too!), and eat! Enjoy!
